Vegan peanut butter cookies


A while ago I was visiting a friend and wanted to bake something to take with me. She had recently become vegan and I wanted to see what recipes I could find that would taste good - this was my first foray into vegan cookery in fact.

Obviously anything using eggs or butter was out, but what I didn't realise until I started looking on the internet is that there are vegan margarines including one called Pure, which makes baking a lot easier. I found a recipe on the internet for vegan peanut butter cookies - peanut butter is vegan of course - that didn't use eggs, so decided to make this.

You need:
75g Pure or other vegan margarine
50g peanut butter
50g caster sugar
50g brown sugar
100g plain flour
pinch of salt

Using an electric mixer, beat the margarine with peanut butter. Add the caster sugar and brown sugar.

Stir in the flour to make a dough.

Shape the mixture into balls and space out on a greased baking tray. Alternatively roll them out and use a cookie cutter - I used a heart shaped one. Bake for about 15 mins at 200C though watch to make sure they don't brown too much especially if you have rolled them out quite thin.

I really liked these and they're a good recipe to use if you've run out of eggs as well!

  1. It's always useful to have a few interesting vegan recipes up one's sleeve and these sound very tasty. They look really good too. I've been going through a bit of a peanut butter phase recently - can't get enough of it.

  2. I'm also enjoying peanut butter at the moment although I'm mostly eating it on toast. I think I have all those ingredients in the cupboard so might have to whip up a batch later, although I'll be using normal marg instead of vegan. It's good to know that it can easily be substituted though.

  3. This is a good recipe to know in case I'm ever in need of a vegan bake! Peanut butter seems to be very popular at the moment. I love the little heart shapes too! :-)

  4. Thank you so much for this recipe! I am going to try it really soon maybe with a gluten free flour mix (hubby has gluten problem and is quite jealous when I eat cookies without him :)
