Meal Planning 2013 - Week 13


I didn't weigh in last week as I had a good excuse - I was in Lapland! We didn't get to see the Northern Lights, which was a real disappointment, but we still had an amazing holiday - I never expected to enjoy whizzing along on a snowmobile at 90 km/h but it was great fun! We also went husky sledding, auroroa hunting by reindeer sleigh and slept in a glass igloo. The food on the other hand was another story and I think my restaurant reviews may have to take on an international slant just so I can share the experience with you (let's just say if I ever see another bowl of salmon soup.....!).

My parents are coming to stay over Easter which is this week and next so I need to plan all our meals as well.

Monday
Day off today as we got back from our holiday late last night and since we only took three days off work for the trip we decided we could afford to take another day's holiday today to recover.
Breakfast Cereal
Lunch macaroni cheese
Dinner Pork medallions with roasted new potatoes


Tuesday
Breakfast Mullerlight
Lunch Macaroni cheese
Dinner With my boyfriend- I ate so much fish in Lapland and he ate steak most of the time that by the end we were both really craving a burger! I almost never cook burgers at home but I'm going to make an exception and will try to recreate the macaroni cheeseburger I had at the Cheesecake Factory last year.


Wednesday
Breakfast Cereal
Lunch Pasta with smoked salmon
Dinner Out at a Jodi Picoult book reading


Thursday
Breakfast Cereal
Lunch Pasta with smoked salmon
Dinner Homemade fishcakes (in the freezer and need to be used up) with new potatoes


Friday
Good Friday so not at work. My parents are coming to stay today from lunchtime today until next Tuesday and will be here from lunchtime onwards. This morning I'm going to make Nigella's Simnel Cake; I also need to marinade the chicken for tomorrow night
Breakfast Cereal
Lunch Fabulous Baker Brothers spicy chorizo sausage roll with salad and potato salad; Simnel cake for dessert
Dinner Out with my boyfriend and his mum at an Indian restaurant


Saturday
Breakfast Cereal
Lunch  Out - planning a day out with my parents in Greenwich
Dinner Teriyaki chicken from How to Feed a Man with Love p27


Sunday
Easter Sunday - a busy day because as well as cooking a big meal I need to make my boyfriend's birthday cake for tomorrow, though I'm sure my mum will help!
Breakfast Cereal
Lunch (main meal) Roast lamb in hay; dessert- profiteroles (from Marian Keyes Saved by Cake p129) and toffee sauce
Dinner (high tea) Fishcakes with salad followed by hot cross buns

  4. Lapland sounds fabulous (odd food aside) The lamb in hay sounds interesting, I can remember doing gammon in hay when I was in guides (many years ago).
