Slimming World Sweet Potato Cakes

"Happy and healthy" is the theme for this month's Random Recipes, as Dom of Belleau Kitchen is focusing on healthy and high fibre recipes as he recovers from an illness. He invited food bloggers to pick one of their healthier recipe books at random, and choose a recipe from that book also at random. I counted my cookery books and found that about 20% of them are specifically branded as healthy - whether it is Slimming World, Weight Watchers, Food Doctor, Rosemary Conley, or generic low fat cook books. I had 20 of them in all!

I used an online random number generator to choose both the book and the page number, and I ended up with sweet potato cakes from Slimming World's Extra Easy Entertaining. They are very easy to make and can be served as a side dish instead of potato, or I think would make a satisfying brunch.

To serve one: Peel and chop one sweet potato. Bring to the boil in a pan of salted water and simmer until tender.


Chop two spring onions and half a red chilli.


Mash the sweet potato in a bowl, add the spring onion and chilli, and either a crushed clove of garlic or a squeeze of garlic puree. Then mix in half a teaspoon of cumin and half a teaspoon of coriander and season with salt and pepper to taste. Finally stir in one egg yolk to bind the mixture.





Mix well, then shape into patties and press down in a frying pan sprayed with Fry-Light.


Cook for 8-10 mins on each side until browned.






These tasted really good and made a nice change from potatoes. I would definitely try these again for a weekend brunch, perhaps seeing if I could mix in some extra chopped vegetables or make them thicker a bit like a frittata.

  1. and they are most greatly received!... I do love a potato cake and you're so right they are so easy... plus I don't think i've ever used sweet potato in a potato cake but I can imagine how good they must work... great random recipes entry, thank you so much, I truly appreciate it x
