Meal Planning 2013 - Week 41
Breakfasts and lunches are not particularly inspired this week as I'm really busy at work- and I ended up eating on the go or quite late last week (when I didn't fancy cooking anything healthy) which is unfortunately showing on the scales. How does anyone else manage to make healthy and interesting lunches when they are pushed for time?
Monday
Breakfast cereal
Lunch leftover homemade butternut squash soup and bread from the weekend
Dinner choir rehearsal - something like macaroni cheese on toast afterwards
Tuesday
Breakfast yogurt
Lunch sandwich
Dinner going round to my boyfriend's mum's
Wednesday
Breakfast yogurt
Lunch sandwich
Dinner green chilli burger / tuna burger with chips. Dessert - Slimming World chocolate orange mousse
Thursday
Breakfast yogurt
Lunch sandwich
Dinner minute steaks marinaded in Nando's hot sauce
Friday
Breakfast yogurt
Lunch sandwich
Dinner creole salmon with cocoa mayo for me, with mashed potato; sausage and mash for the other half
Saturday
Breakfast cereal
Lunch cheesy muffins with a variation on a full English
Dinner will invite the OH's mum over who is veggie - butternut squash and sweet potato lasagne for us, meat lasagne for him. For dessert, butterscotch pie
Sunday
Breakfast yogurt
Lunch tacos
Dinner chicken Lady Jayne with roast potatoes from chicken book p94.

The only healthy easy lunch I have is soup. I make a huge pot and then freeze it in portions, it microwaves in no time and it is easy to grab bread or crispbreads to go with it.
