Smoked Salmon Pasta

 
 
This is one of my favourite quick and easy meals and it is also surprisingly cheap to make as you can adapt it to use up whatever ingredients you have. You need:
- smoked salmon, tinned salmon or leftover cooked salmon (about 100g)
- half a glass of white wine or apple juice or fish stock
- 100g soft cheese or plain yogurt or Quark
-pasta
-broccoli (optional)
 
I usually make this with smoked salmon but have also used tinned salmon. You can buy packets of smoked salmon trimmings that are quite cheap or  use any kind of smoked salmon. Cut or tear it up and put to one side. Meanwhile cook the pasta until al dente. Cook the broccoli if using- I often do this in the same pan as the pasta to save on washing up!
 
 


When the pasta is cooked, add the wine, juice or stock to the pan and cook for a couple of minutes. Stir in the yogurt or soft cheese; if using the cheese stir it around for a few minutes until melted. Add the broccoli and the smoked salmon and season with salt and pepper.


Gently fold in and serve - I've topped mine with basil. It's a really good mid-week dinner option.
