Cadbury's Mini Eggs are very popular in my house and the fact that they are only available around Easter makes them extra special! I bought a couple of packets and wanted to use them in baking - then my boyfriend ate them, so I bought some more - then he ate those, so I bought some more! Eventually I got around to choosing a recipe and for me there was one clear winner - Mini Egg chocolate brownies.
You can add Mini Eggs to any chocolate brownie recipe; I used Nigella's everyday brownies recipe which you can find here.
In retrospect what I should have done is saved some of the mini eggs and added them on top of the part-baked brownie five minutes before the end; this would have ensured there were some to decorate the top as they all sank in! You can see the mini eggs inside the brownies though.

ReplyDeleteI'm typing this with my eyes closed :) so that I don't have to look at all the lovely pictures of chocolate and mini eggs. I can't have chocolate any more as I'm diabetic, and most of the time I don't miss it, but oh dear, when Mini eggs are around it's a struggle! Anyway, thanks for your comment on my Gado Gado post. You mentioned craft challenges - well, there are loads of them around, quite literally hundreds, so whatever style of crafting you fancy, you can almost always find one that suits you. I'm on the admin team of a blog called Challenges for Days http://challengesfordays.blogspot.co.uk/ that has daily posts listing as many new and updated challenges we can find, and it's a great way of finding craft link ups to enter.

mini eggs are my favourite at Easter. I would be happy with a giant bag of these instead of any large sized easter egg... and now I can have them in brownies too... RESULT!!!! An amazing entry for Simply Eggcellent, thank you x
